i have never attempted to make sloppy joes in our almost ten years of marriage because my husband told me the first week of our marriage that he didn't care one bit if i never made them. and since i don't particularly care for them either, i haven't been sad about that. when i came across this recipe, however, i thought that this one just might change our opinion about sloppy joes....and it did! now we can add sloppy joes to the menu now and then! from everyday food magazine.
ingredients
1/2 medium onion, diced small
1 medium yam, peeled and diced small
2 cloves garlic, minced
1 lb ground turkey
14oz diced tomatoes, drained
1/3 C ketchup
2 T worcestershire
hamburger or slider buns
directions
heat 1 T olive oil over med-high. add onion and yam and cook til soft, about 8 min. add garlic and saute about 30 sec; season with salt and pepper. add turkey and cook til browned. add tomatoes, ketchup and woscestershire and simmer 5 min. voila!

a different kind of meatloaf
in all our nine years of marriage i have never once made meatloaf because i remember him telling me when we were engaged that he didn't care for it. this version, however, gained his and my children's approval.
you can make it with pork or turkey. i used turkey and substituted the fresh parsley, salt and italian seasoning with harry and david's turkey rub. it's from everyday food magazine.
ingredients
1 1/2 lb ground pork or turkey
2 C thawed frozen hash browns
1 large carrot, shredded
1 small onion, shredded
1/4 C parsley, roughly chopped
2 large egg whites
2 t coarse salt
3/4 t pepper
2 t italian seasoning
directions
mix everything together. transfer to a parchment-lined loaf pan and form into a loaf. bake @ 350 until golden brown, about 1 hour. serve with your favorite gravy.

turkey in the crockpot
we always have thanksgiving with family, so i haven't had the opportunity to cook the traditional meal for quite a few years. so last night, since we were having guests for dinner, i decided to cook a mini thanksgiving meal to get my thanksgiving cooking fix.
i was going to be gone half the day, so i thought i'd try turkey in the crockpot and it was AMAZING! breast meat that was actually moist and juicy! yum! here's what i did:
ingredients
3lb turkey breast
1/2 C chicken broth
olive oil
butter
harry and david turkey rub
directions
rinse the meat and pat dry. pour the broth into the crockpot. brush turkey with olive oil until just coated on top. smooth a thin layer of butter over that. cover butter with the turkey rub. cook on low for 4 1/2 hrs. voila! it was falling apart as i cut it....
