crock pot dinners

i would love to cook dinner in my crock pot more often. however, i distrust a lot of recipes i find because i guess i just don't always believe that only three ingredients are all you need for a scrumptious main dish. what are your favorite crock pot dinner recipes? i'd really love to have some trusted recipes to try. thanks!

I use my crock pot all the time! I have a really great cookbook that is all crock pot meals if you want to borrow it and copy any that interest you. I have made a lot of recipes from it and they have all been good.

This is a 3-ingredient recipe that really is good, at least our entire extended family likes it. It is Italian beef for sandwiches, but we all call them Pepperoncinis.
Salt and pepper one rump or chuck roast and throw it in the crockpot. Pour one jar of pepperoncini peppers, either whole or in rings, that's up to you, and one can of regular club soda (not low-sodium) over it. Cook all day on low until shreddable. Then shred it all up, set the peppers and juices aside to serve with the sandwiches, cut some rolls, and then add whatever fixins you like. We use a good sliced cheese, pickles, tomatoes, mayo, brown mustard, lettuce, and onion slices.
